Subz Biryani!



2 cups East India Pantry basmati rice blend (or any other brand)
3 oz carrots- cut into small cubes
10 oz cauliflower broken into flowerettes
10 french beans cut into 1 inch pieces
1 large onion- sliced
3 tbsp oil
Salt to taste
3 tsp East India Pantry Hyderabadi Masala
1 bay leaf
2 inch cinnamon stick
4 green cardamom pods


Heat oil in a large, heavy bottomed pan. Add bay leaf, cardamom pods, cinnamon sticks and fry for a minute. Add sliced onions and fry till onions turn golden brown.

Vegetable and spice mixture

Add East India Pantry Hyderabadi Masala, vegetables and fry for 2-3 mins. Add rice and fry for another 2 mins.

Measure 4 cups of water and add to the rice-vegetable mixture. When water boils, let it cook in high heat for 2 mins. Reduce the heat, cover with a tight fitting lid and simmer for 15 mins till the rice is well done.

Simmering Biryani!

Fluff the rice with a fork, so that the grains seperate. Serve hot with raita!
