3 STEP TOMATO RICE
Gingelly oil (or Vegetable oil)- 3 teaspoons
Mustard seeds- ¼ teaspoon
Chopped chillies (Serrano peppers)- 2 tsps
Curry leaves- a few (8-10)
Chopped roma tomatoes- 2 cups
Chopped garlic and garlic- 1 tablespoon each
Chopped cilantro- 1 tablespoon
Salt to taste
Cooked basmati rice- 2 cups
STEP 1: Heat oil in a pan, add mustard seeds, chopped chillies, curry leaves, garlic, ginger and sauté for a minute till mustard seeds stop spluttering.
STEP 2: Add tomatoes, salt and cook till they form a pulp (about 10 minutes)
STEP 3: Add the cooked basmati rice and mix well. Garnish with chopped cilantro.
