Pineapple Kesari is a favorite childhood treat of mine. I remember every evening when we would come home after school, my mom would prepare this quick and easy sweet which we loved so very much. I’d like to share this easy recipe with you so you can make it for your loved ones or just for yourself. Enjoy!
Semolina- 1 cup
Sugar- 1 cup
Water- 2 cups
Saffron (optional)- ¼ tsp mixed in 2 tablespoons of warm milk
Ghee (clarified butter)- 4 tablespoons
Pineapple chunks- 1 small can
Slow roast semolina in a non stick pan for ten minutes till its aromatic. Make sure the semolina does not burn. Add water and stir quickly till the semolina dissolves completely and there are no lumps. Add sugar and mix. Add ghee and pineapple chunks, saffron mixture. Give it a stir. Cover with a tight fitting lid and simmer for 8 minutes. Serve warm or room temperature.
