Cumin (Jeera) Rice

Serves 3
• 1 cup Basmati Rice (washed and drained)
• 1.5 cups water
• 1 tsp cumin seeds
• 1 tablespoon minced onions
• 1 green chilly slit lengthwise (serrano, jalepeno)
• 1 bay leaf
• 3 cloves
• Cinnamon small piece
• 1 tsp butter or ghee
• Salt to taste
Heat the butter (ghee) in a skillet. Add the whole spices (bay leaf, cloves, cinnamon) and cumin seeds fry them for few seconds. Stir in the onions and green chili, sauté until the onions are translucent.
Add the rice, water and salt, give it a stir. After it comes to a boil, cover the saucepan with a lid and cook in low flame until the rice is done. This takes 20 minutes.
