Chicken Tikka Masala

Serves 4
• 1 lb grilled chicken, cubed into 1 inch pieces
• 3 tablespoons oil
• 3 teaspoons East India Pantry Punjabi Masala
• 1 teaspoon salt (adjust to taste)
• 1 onion chopped fine
• 2 tomatoes, blanched and pureed
• 2 tablespoons plain yogurt
• 2 tablespoons fresh cream
• 2 tablespoons cilantro, chopped
Heat the oil in a sauté pan on medium heat. Add chopped onion and fry till translucent. Add the pureed tomato, East India Pantry Punjabi Masala and salt. Fry till you see oil surface to the top.
Add yogurt and fry for another five minutes. Add grilled cubed chicken and two cups of water. Cover the pan and let simmer for five minutes. Garnish with chopped cilantro and fresh cream and serve.
Marinade for grilled chicken:
Chicken- 1 lb
Ginger powder- 1 tsp
Garlic powder- 2 tsp
Garam Masala- 1 tsp
Lemon Juice- 3 tsps
Oil- 1 tablespoon
Salt- 1 tsp
Cinnamon powder- 1 tsp
Marinate chicken in the above ingredients for at least 1 hr and bake in the oven at 400degree for ½ hr.
