Recipe makes 1 – 7×11 inch dish


6 egg yolks

3/4 cup white sugar

2/3 cup milk

1 1/4 cups heavy cream

1/2 teaspoon vanilla extract

8oz mascarpone cheese

1 cup strong brewed coffee, room temperature

2 tablespoons amaretto

24 ladyfinger cookies

2 tablespoon unsweetened cocoa powder

1 dark Chocolate bar for shavings


In a double boiler, whisk together egg yolks and sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture comes to a simmer. Simmer gently for 2 minutes, remove from heat and allow to cool slightly. Whisk mascarpone into yolk mixture until smooth. Cover and chill in refrigerator 1 hour.

In a medium bowl, beat cream with vanilla until stiff peaks form. (Can substitute with store bought whipped cream) Gently fold the mascarpone cheese mixture with the whipped cream.

In a small bowl, combine coffee and amaretto. Dip the lady fingers as you assemble the dessert. A little goes a long way. Although the cookies might seem crunchy while dipping in coffee, they soften when the dessert sets.

Arrange half of soaked ladyfingers in bottom of a 7×11 inch dish. Spread half of cheese/cream mixture over ladyfingers. Dust cocoa powder and sprinkle chocolate shavings. Repeat layers and sprinkle with cocoa and chocolate shavings. Cover and refrigerate 4 to 6 hours, until set.
